Yummy Nut Bars

Yet another way to get some healthy fats including Omega 3’s in for an on-the-go snack that will keep you full and aware throughout the day.

  • Yields: 16 Squares

Ingredients

2 cups raw almonds, cashews, or macadamia nuts

½ cup ground flax meal

½ cup unsweetened shredded coconut

½ cup creamy roasted or raw almond butter, cashew butter, pecan butter, or macadamia butter

½ teaspoon celtic sea salt

½ cup unrefined coconut oil

1 to 1 ½ tablespoons raw honey or 4 drops of stevia

1 tablespoon vanilla extract

Directions

1Put the nuts, flax meal, shredded coconut, nut butter, and salt in a food processor and pulse briefly (about 10 seconds).

2In a small sauce pan, melt the coconut oil over low heat. Remove from heat and stir in honey or stevia and vanilla.

3Add the oil mixture to the food processor and pulse until a coarse paste is formed.

4Press the mixture into an 8”x8” baking dish. Refrigerate for about 1 hour until the mixture hardens.

5Remove from the refrigerator and cut into 16 squares.
