Sweet & Savory Peach Chicken

This recipe has it all.  Fruity, juicy, sweet and savory! It is a perfect protein packed gluten free dish.

  • Yields: 1-2 Servings

Ingredients

1-2 chicken breasts

1-2 fresh peaches, de-pitted and sliced

2 Tablepsoons maple syrup

1/4 cup balsamic vinegar

3 Tablespoon grass-fed butter

1 medium white onion, diced

Salt and pepper

Directions

1Heat the butter in a large iron skillet over a medium-high heat.

2Season chicken on both sides with salt and pepper, add to the skillet and cook until browned, about 2 minutes per side.

3Once done, take off heat and set aside.

4Add another tablespoon of butter to skillet to melt.

5Add maple syrup and balsamic vinegar, stirring for 30 seconds.

6Add peaches and cook uncovered for 5-7 minutes, stirring until sauce is thick and peaches are soft.

7In a seperate pan, melt another tablespoon of butter and add sliced onions.

8Season with salt and pepper.

9Saute on medium low for 20 minutes or until carmelized.

10Add the chicken back to the pan with the maple syrup sauce, turn the heat down to moderate-low, cover and cook for about 5 minutes, or until chicken is cooked through.

11Serve the chicken on top of maple syrup peaches and top with carmelized onions.

Juicy Tips: 

  • In the Summer, I love using farm fresh peaches.  If you're wanting to make this in the Winter months, opt for a frozen bag of peaches.
