Red Skillet Potatoes

Another savory way to enjoy red baby potates!

Ingredients

8-10 small red potatoes, washed and cut in half

1-2 Tablespoons grass-fed butter or ghee

Salt

Pepper

2 Tablespoons fresh parsley, chopped

Directions

1Turn oven to 375.

2Over a medium burner, let a cast iron skillet heat up 5-10 min.

3Add ghee or butter onto the skillet and make sure skillet is evenly coated.

4With a mandoline, slice potatoes thinly.

5Place potatoes so they overlap each other in a circular pattern starting at the edges of the iron skillet and working inwards.

6Sprinkle with parsley, salt and pepper.

7Roast for 20-25 minutes

8Turn potatoes and cook another 5-10 min or until a fork pierces them easily.

9Serve with your favorite dish.
