Eggcellent Salad

You won't be able to resist this Egg-cellent Salad!  It is simply delicious.  You can whip this up in no time for a light snack or meal.

  • Yields: 4-6 Servings

Ingredients

6 eggs, hard boiled* and peeled

1/4 cup chopped green onion

1/2 cup chopped celery

1/2 cup chopped or sliced carrots

1 Tablespoon fresh dill, chopped

1 Tablespoon Dijon mustard

1/3 cup mayonnaise

1/4 teaspoon paprika

Salt and black pepper to taste

Directions

1Chop the eggs and put them into a large bowl.

2Add the green onion, celery, carrot and dill.

3Gently stir the mayo and mustard into the bowl with the eggs and vegetables.

4Add paprika, salt and black pepper to taste.

5Best served chilled over a bed of lettuce or on your favorite bread.

My favorite mayo is from Spectrum or Organic mayo from Trader Joe's.

*I hardboil about 6-12 eggs at the start of the week for easy on-the-go snacks or to make this dish in less than 20 minutes.
