Crunchy Parsnip Chips

Grab these little home-baked chips for a simple and nutritious snack!

Ingredients

1 large parsnip

Salt and pepper (optional)

Garlic powder (optional)

Extra virgin olive oil (optional)

Directions

1With a mandolin slicer, slice parsnips into thin discs or cut into thin slices.

2Place on baking sheet in oven at 250 degrees F for 25-30 minutes.

3Let cool and serve plain or with your favorite dip.

Try experimenting with other root veggies like sweet potatoes, yams, rutebega, beets carrots!

I like to dip these in hummus or guacamole.
