Crispy Baked Hazelnut Cod (GF/DF)

Paired with nutty and crunchy flavors of hazelnuts and almond flour, cod is a great mild fish full of flavor, protein and selenium; an essential trace mineral important for healthy brain function, immune system and fertility for both men and women.

Ingredients

½ cup finely ground hazelnuts

¼ cup finely ground almond flour

¼ cup grated parmesan or for a dairy free version try nutritional yeast

5 to 8 ounces wild caught cod

Salt and pepper, to taste

Almond flour for dusting

1 egg beaten with 1 tablespoon coconut or almond milk

Lemon wedges

Directions

1Preheat oven to 400°F.

2Mix together hazelnuts, almond flour, and parmesan or nutritional yeast.

3Season fish with salt and pepper, then dust with almond flour.

4Dip fish in egg mixture, then coat all sides with hazelnut mixture.

5Place fish on a lightly oiled baking sheet.

6Bake in oven for 10 to 15 minutes until cooked through and flaky.

7Serve with lemon wedges.

Juicy tips:

  • Feel free to sub out hazelnuts for ground walnuts and coconut for almond flour.
  • My favorite nutritional yeast is this one.
