Creamy Coconut Pork Chops

Now THIS is the one of the most delicious ways to eat chicken or pork chops.  Hmmm mmm mmm.  The carmelized onions mixed with the creamy cilantro rice is a delightful pair.

Ingredients

Pork Chops

2-3 pork chops or chicken breasts

1 Tablespoon grass-fed butter

1/4 cup coconut cream

Salt

Pepper

Carmelized Onions

1 medium onion, sliced thinly

1 Tablespoon grass-fed butter

1/4 cup coconut cream

Salt

Pepper

Brown Rice

1 cup brown rice, cooked

1/2 cup cilantro, chopped

1 Tablespoon grass-fed butter

1/4 cup coconut cream

Salt

Pineapple

1/2 pineapple, sliced

Directions

Pork Chops

1Season pork chops with salt and pepper.

2In a pan, saute pork chops in coconut cream and butter.

3Pork chops will brown on sides.

Onions

1In a seperate pan, saute sliced onion in butter or ghee or coconut cream until caramelized.

Brown Rice

1Add chopped cilantro and other half of coconut milk to rice.

2Serve carmelized onions over pork chops and under brown rice with cilantro.

3Enjoy with sliced fresh pineapple or mango.

Feel free to swap out chicken as an alternative for pork.

My favorite coconut cream is from Trader Joe's.  I open up the can and use the leftovers for smoothies the rest of the week.

If I'm realling running low on time, I'll use brown rice that you can heat up in the microwave.
