We smoked a brisket a day prior, shredded the leftover meat and had enough for multiple dishes including these tasty Caribbean BBQ inspired tacos.

3-4 cups shredded BBQ pork, pre-made
3-6 corn or rice tortillas
3-4 Tablespoons olive oil
1/2 cup pineapple sliced
1/8 Tablespoon cilantro chopped
1 medium avocado, seeded and diced
1/4 red onion, diced
1/4 cucumber, diced
Salt to taste
1Heat the 1 tablespoon oil in a large skillet over medium heat.
2Add the tortillas and brown on each side, about 2 minutes each.
3Shred the pork with 2 forks and add to skillet to heat.
4In a separate small bowl, combine pineapple, cilantro, salt, cucumber, avocado and onion with 1 tablespoon of oil and season with salt to taste.
5Serve the shredded pork in the tortillas, along with toppings.
