Sweet & Savory Spring Rolls

The goodness is totally what's inside these spring rolls.  Get creative and add your favorite fresh vegetables, herbs and protein like chicken, pork or tofu. And if that doesn’t make your tastebuds dance with joy, you’ll love the creamy smooth almond butter dipping sauce.

  • Yields: 8-10 Spring Rolls

Ingredients

8-10 sheets of rice paper

Gluten-free hoisin sauce or tamari for dipping

A few large leaves of lettuce (optional)

Almond Butter Sauce

1/4 cup natural almond butter, room temperature

1/4 cup full fat coconut milk

1 Tablespoon Thai fish sauce

1 Tablespoon of honey

Juice of 1/2 lime, about 2-3 Tablespoon

1/2 teaspoon hot chili oil or 1/4 teaspoon cayenne pepper

Filling

1/2 red, green or orange bell pepper, sliced thin

1/2 cup shredded carrot

1/2 cucumber, sliced thin

1 stalk green onion, sliced thin

A couple stalks of fresh cilantro

Directions

1In a large round, shallow bowl, soak one rice wrapper in warm water at a time until soft and pliable.

2Remove from water and place on a plate or cutting board.

3Place a large piece of lettuce on wrap.

4Fill the wrap with each vegetable along with a sprig of cilantro.

5Fold the bottom ends in first and then fold the sides in to roll up like an eggroll.

6Set eggrolls on a large cutting board that has been wet down to keep from sticking.

7In a small mixing bowl, mix together all of the almond sauce ingredients until smooth. You can adjust the sweetness and/or spiciness to your liking.

8Once all rice wraps have been made, serve with the almond butter dipping sauce or your favorite gluten-free hoisin or tamari sauce.

I like to use a pyrex or glass pie dish with warm water to soak the rice paper in. My favorite type of gluten free tamari or soy sauce is by San-J. They make a ton of gluten free Asian inspired sauces that are divine.

My favorite rice wrappers are by Tasty Joy and you can pick those up at any major grocery store or an Asian Market.

Make these ahead of time and pop one in your mouth for a fulfilling snack or appetizer.
