Sunbutter Cups

Replace the Reese's and enjoy these creamy dairy-free delights.

  • Yields: 24 Mini Cups

Ingredients

1/2 cup smooth sunflower seed butter

3 Tablespoon coconut oil, divided

2 Tablespoon coconut flour

2 Tablespoon honey

1/4 teaspoon vanilla extract

12-15 ounce soy-free chocolate chips

Directions

Sunflower Butter Filling

1Add the almond butter, coconut oil, coconut flour, honey, and vanilla extract to a food processor or mixer. Mix well, scraping the sides as needed. Set aside.

Chocolate Chips

1Melt the chocolate chips with the remaining one Tablespoon coconut oil over a double boiler on low heat.

2In a greased muffin pan, spoon about a teaspoonful of chocolate into the bottom of six muffin cups. Drop a tablespoon of the sunflower seed butter mixture in next. Cover evenly with the remaining melted chocolate.

3Chill, until firm about 1-2 hours.

4Store in a covered, cool dry place.

You can sub out the Sunflower Seed Butter for Almond, Walnut or Pecan butter. Make your own sunflower seed butter or buy from Trader Joe's or use the SunButter brand.

I use allergen-free chocolate chips from Enjoy Life.  These can be picked up at Jewel or your local health food store.
