Rainbow Chard, Carrots, Blood Oranges, and Citrus Vinaigrette

There’s nothing more colorful and full of vibrant immune-boosting veggies and fruits than this fun salad with a twist of citrus homemade dressing.

Ingredients

Salad

1 bunch rainbow chard, chopped

3 large carrots, chopped

1 blood orange, skinned, sliced

1 orange, skinned sliced

Vinaigrette

2 tablespoons fresh squeezed orange juice or boxed orange juice

1 teaspoon dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons honey

2 tablespoons extra virgin olive oil

Directions

1Mix all salad ingredients together.

2Combine vinaigrette ingredients together and whisk until well incorporated.

3Drizzle 2 to 3 tablespoons of dressing over your salads.

Juicy Tips: 

  • For extra juicy oranges, try rolling them (with the skin on) on a cutting board and then cutting into them.
  • Give your greens a spa treamtment! Massage Rainbow Chard so it is softer to eat and easier to chew.
