Juicy Peach & Tomato Salsa

My favorite farmer’s finds sliced and diced into a simple but flavorable salsa! Cilantro is a great detoxifyer and the tomatoes, onions and peaches are full of vitamin C and Beta carotene to keep your inflammation at bay and your immune system high and mighty!

  • Yields: 6 Servings

Ingredients

1 peach, diced

1 tomato, sliced

1 tablespoon cilantro, chopped

1 avocado, seeded and diced

1 tablespoon red onion chopped (optional)

1 tablespoon olive oil

Salt to taste

Directions

1Wash and dice your veggies.

2Put in a small mixing bowl.

3Add olive oil and salt then toss.

Dont' have peaches? You can use mangos or nectarines.

Summer is a great time for this salsa with heirloom tomatoes, but if you don't have access to those, Roma or regular tomatoes will do.

This salsa is great over a salad or on top of wild caught salmon or chicken, or use in fish or shrimp tacos or simply dip your favorite chip into them.  I'm a fan of Beanitos (Corn-free chips) or make your own rice tortilla chips.
