Gluten Free Angel Food Cake

  By ElyseWagner

A delightfully light cake that will have you dreaming you’re on one fluffy Angel Food Cake Cloud.

Mantra: I am enjoying each bite mindfully.

  • Prep: 15 mins
  • Cook: 45 mins
  • Yields: 12 Slices

Ingredients

1 1/2 cups powdered sugar, divided (I like Wholesome Organic Powdered Confectioners Sugar)

1 cup gf all purpose flour (Pamela’s)

1/2 tsp salt

11 egg whites, at room temperature

1/3 cup warm water

1/2 tsp vanilla extract

Directions

1Preheat the oven to 350 degrees F.

2Sift together flour, salt, and 1/4 cup sugar.

3In a seperate bowl beat the egg whites, water, cream of tartar and vanilla on low speed. Increase the speed. As soon as whites reach the soft-peak stage, begin adding remaining sugar, a tablespoon at a time.

4Beat until whites are glossy and stiff.

5Sift dry ingredients 1/4 cup at a time over the whites, folding them in after each addition.

6Spoon batter into a 10 inch ungreased angel food cake tube pan. (Hint: Do not use a pan with a no-stick surface and do not grease the pan)

7Tap the pan once on the counter to help distribute batter.

8Place pan on the middle rack if oven and bake 45 minutes.

9Edges will pull away from the sides of the ban.

10Place cake (still in the pan) upside down on a rack.

11Do not remove cake from the pan for one hour.

Serve with fresh strawberries, blueberries and/or SoDelicious Whip Cream for a dairy free delight!

This recipe calls for using Pamela's Gluten Free all purpose flour.
