Sweet Potato Chips

Full of flavor and crunch, pop these bright beauties right out of the oven for a healthier version of chips.  Goes great with burgers, chili or your favorite sandwich.

  • Yields: 5-6 Servings

Ingredients

2-3 medium to large sweet potatos

2 Tablespoons olive oil or coconut oil

1/2 Tablespoon garlic powder (optional)

Salt and pepper to taste

Directions

1Preheat oven to 350 degrees F (121 C) and position oven rack in the center of the oven.

2Prepare a baking sheet with coconut oil or olive oil.

3Rinse and dry sweet potatoes.

4Using a mandolin, uniformly slice the potatoes or use a sharp knife to uniformly cut them as thin as possible.

5In a bowl, toss the potato slices with garlic, salt and pepper.

6Lay slices on prepared baking sheet.

7Bake for about 45 minutes.

8Flip chips after 45 minutes and keep baking to ensure even cooking.

9Once brown and crispy, remove from oven.

10Let rest and serve with your favorite dipping sauce or entree.

Feel free to experiemnt with different spices and herbs.  For a zesty Mexican flare, add taco seasoning or cumin and roast or bake.

Try to make uniform size chips.  Note that the thicker the chips, the less crispy they will be.
