Simple Cilantro Brown Rice

I am SUCH a fan of this easy brown rice combo.  Fresh cilantro, brown rice with some zesty cumin or taco seasoning makes the best side dish to serve with Tacos, or a taco bowl, enchiladas or any Mexican inspired dish for that matter.

  • Yields: 3-4 Servings

Ingredients

1 package brown rice (I love Trader Joe's -it's quick and easy)

1 teaspoon taco seasoning

1 Tablespoon butter

1/4 cup cilantro (optional)

Directions

1Heat up rice in a bowl with butta and taco seasoning or cumin (and yes I mean butta not butter). 🙂

2While that's heating up, chop up your fresh cilantro.

3Once cooled, add your cilantro, mix and serve.

FAB Tip: For an awesome variation that tastes amazing, sub out cumin and/or taco seasoning for coconut milk and add as a side dish to this Creamy Coconut Pork Chop.
