Maple Pumpkin Butter Vinaigrette

2 tbsp Pumpkin Butter (I love to get the already-done-for-you Pumpkin Butter at Trader Joes) If you don’t have access to that, you can make your own with the recipe below.

1 tsp organic maple syrup

1/4 cup organic apple cider vinegar

1/3 cup cup olive oil

1/2 tsp dijon mustard

Sea salt and fresh black pepper to taste

Pumpkin Butter

2 cans organic pumpkin puree

1/4 cup + maple syrup

2 tbsp pumpkin pie spice

2 tsp vanilla extract

pinch of salt


  1. Add all ingredients to blender or Vitamix and blend until silky smoothe.
  2. Pour dressing in a jar and set in the fridge until ready to serve.

Pumpkin Butter Directions:

  1. Add all the ingredients to a bowl and mix until well combined.

Once your vinaigrette is made, you can pour it over your choice of greens. I love arugula or mixed greens, choose your favorite type of chopped nuts (pecans, walnuts or almonds goes great) and fruit - either apples, pears or pomegranate seeds! Feel free to have fun and enjoy! For another element, choose a cheese that you like! Blue, goat or shaved parm go great!
