Collard Green BLT Wrap

Who needs bread when you've got this awesome wrap. Bring on the collards! These sturdy leafy greens will keep all your precious ingredients inside while providing an easy on-the-go alternative to the carby cousin. Remove the guilt and just enjoy. (GF, DF, CF, SF)*

Ingredients

1-2 slices of bacon, cooked

1-2 collard green leaves, washed

2-3 slices of tomato

1/2 cup mayonnaise or Vegenaise

1/4 cup greens (lettuce, arugula, spinach)

Directions

1In a medium to large sized skillet, add 2-3 slices of bacon and let brown up over medium heat. Wash collard green stalks.

2With a knife, make a slit one inch above the top of stem and trim the rest of the stem off.

3Once bacon is done, pull off the stove and place on a paper towels to catch excess oil.

4Spread mayo over collard green, add bacon, tomatoes and extra greens.

5Tuck in sides, roll up, cut in half and voila - a BLT wrap!

I'm a fan of using Organic mayo or Veganise for those of you who need to eat eggless.

If collard greens are not your fav, try swapping out for bib lettuce, romaine or Swiss chard leaves.

Not into bacon, add chicken, eggs or extra veg to beef up this hearty wrap.

*This wrap can be made totally gluten, dairy, soy and corn free depending on the bacon and mayo used.
