This classic cookie is filled with some creative substitutions like protein, healthy fats and antioxidants making it a healthier alternative!
2 cups blanched almond meal (I use Trader Joe's brand)
3 Tbsp grass-fed ghee, melted
3 Tbsp grass-fed collagen (I use Greatlakes collagen)
1-3 Tbsp Monk fruit to taste (one for one sweetener with sugar)
2 Tsp organic vanilla
1 egg
1/2 tsp baking soda
1 tsp apple cider vinegar
Pinch of salt
1/4 cup raw cocao nibs or chocolate chips for sweeter taste
1Preheat oven to 340 and line baking sheet with parchment paper
2Mix all ingredients together and form into dough
3Roll into small balls and flatten onto baking sheet
4Bake for 15 minutes or until golden brown
