BBQ Chicken Cilantro Pizza with Cauliflower Crust

Sometimes life calls for balance and pizza. This Cauliflower Crust BBQ Pizza is a gluten free delight and super easy to throw together after a long week!

Ingredients

Cauliflower Crust

1 head cauliflower, stalk removed

1/2 cup shredded mozzarella

1/4 cup grated Parmesan

1/2 teaspoon dried oregano

1/2 teaspoon kosher salt

1/4 teaspoon garlic powder

2 eggs, lightly beaten

Pizza Toppings

1-2 chicken breasts cooked, sliced or diced

1/2 cup cilantro, chopped

1/2 red onion, sliced or chopped

1/2 cup BBQ sauce

1 cup mozzarella cheese or your cheese of choice

1/2 cup Parmesan cheese

Directions

For the crust:

1Cut the cauliflower in smaller pieces and boil in a large pot of water for 20-30 minutes or until soft.

2Preheat the oven to 400 degrees F.

3Line a baking sheet with parchment paper.

4Once cauliflower is soft, drain and pulse in a food processor until smooth.

5Pour caulifower on a kitchen towel and draink as much water out of the vegetable as possible.

6In a bowl, combine the cauliflower with the mozzarella, Parmesan, oregano, salt, garlic powder and eggs.

7Transfer to the center of the baking sheet and spread into a circle (or square), resembling a pizza crust.

8Bake for 20-30 minutes and take out of oven.

Toppings:

1Add a layer of BBQ sauce, sprinkle pizza with chicken, cilantro, onion and cheese.

2Bake an additional 10 minutes or until lightly brown.
